Lynn Proctor, subject of the soon-to-be-released documentary film "SOMM" as the distinguished guest speaker at the next installment of its popular "Vine & Dine" wine and food pairing dinner series entitled "An Evening with the Sommelier" on Friday, March 23. Throughout the evening, Proctor will introduce guests to a selection of six wines rated 90 or better from Treasury Wine Estates, an Australian-based global winemaking and distribution business. The documentary, produced by Forgotten Man Films, follows Proctor and three other sommeliers throughout their rigorous training and preparation for the Master Sommelier exam held by The Court of Master Sommeliers. Dubbed by the filmmakers "the hardest test you’ve never heard of," the exam has one of the lowest pass rates of all certification tests in the world. The title of Master Sommelier is considered the highest achievement in the world of wine and is a distinction that only 118 people in North America and 186 people in the world have received since The Court of Master Sommeliers was established in 1973. Proctor is just one of the many distinguished wine experts to appear at Rosen Centre’s Vine & Dine series over the years. In January, Vine & Dine featured Jesse Lange, general manager/winemaker of Lange Estate Winery & Vineyards, an award-winning winery in Willamette Valley, Oregon. On May 18, the next Vine & Dine event, Rosen Centre will welcome Joseph Spellman, a Master Sommelier from Justin Vineyards & Winery in Chicago who earned his M.S. certification in 1996. Beginning at 7 p.m., the welcome reception will feature Penfolds "Thomas Hyland" Riesling Adelaide 2008, which was rated 90 points by Wine Spectator magazine & Top 100 Best Values. The first course during "An Evening with the Sommelier" will feature Heirloom Beets, Goat Cheese and MicroGreens with Pistachio Vinaigrette paired with a 2008 Matua "Paretei" Sauvignon Blanc from Marlborough New Zealand, rated 92 points by Wine Spectator. The second course includes a Seared Sea Scallop, Celery Root Cream and Candied Grapes served with a 2009 Chateau St. Jean "Belle Terre" Chardonnay from Alexander Valley, which earned 91 points from The Wine Advocate & Margo Van Staaveren, voted 2008 Winemaker of the Year by Wine Enthusiast. Guests will then have the opportunity to cleanse their palates with an Elder Blossom Sorbet before moving on to the main course, Filet of Beef with Chanterelle Mushrooms and Cipollini Onion Ragout, Smoked Tomato Grits and Grilled White Asparagus. Diners may then compare two Cabernet Sauvignons with the main course: the Beringer "Knights Valley" Cabernet Sauvignon, Sonoma 2009, rated 91 points by The Wine Advocate and the Beringer "Napa" Cabernet Sauvignon, Napa 2009, a new release that has not yet been rated, although past wines scores for the vineyard have been in the 90s. And finally, for dessert, guest may contrast one wine, the Penfolds "Club" Tawny, SE Australia, with a sweet and savory Duo Dessert plate: Artisan Cheeses and an Engadiner Nut Torte with Chocolate Truffle. Each Vine & Dine event begins at 7 p.m. with a reception in Everglades Bar that features a welcome wine or unique wine cocktail. The group then adjourns to Everglades restaurant, offering a comfortable, yet refined setting that evokes the natural beauty and relaxed atmosphere of the Florida Everglades, for a five-course, gourmet dinner highlighted by fresh, seasonal ingredients and wines expertly selected to complement the cuisine. During dinner, guests may engage in casual conversation about wines with an experienced wine maker or knowledgeable sommelier chosen for each event. Guests can also enter to win exciting raffle prizes, such as bottles of wine, wine-related items or hotel stays. An intimate dining experience, each Vine & Dine event is limited to no more than 40 guests, ensuring personal attention for each attendee. The cost of each Vine & Dine dinner is $70 per person, plus tax and gratuity.
