Dishin’ with the Chef: National Blueberry Month

Did you know July is National Blueberry Month? The blueberry has the distinction of being one of the few fruits native to North America. Enjoy this berry at its juiciest and plumpest while they’re in season and you’ll also receive the health benefits of this “purple powerhouse.” We celebrate National Blueberry Month in Everglades Restaurant with delicious dishes such as our Everglades Berry Salad, then enjoy our Filet of Buffalo with Blueberry Balsamic Sauce and end your meal with our dessert specialty Pecan Tuile with fresh blueberries and strawberries. Rosen Centre’s Everglades Restaurant Everglades Berry Salad

Serves 4

Ingredients

1 ½ cups – organic field greens
6 fresh raspberries
8 fresh blueberries
5 fresh strawberries cut in half (10 halves)
2 ounces – feta cheese crumbles
2 ounces – pistachio vinaigrette (see ingredients below)

Add the organic field greens, feta cheese crumbles and all of the berries listed in the Everglades Berry Salad to a large serving bowl.

In a separate smaller bowl, mix Pistachio Vinaigrette ingredients. Use two ounces of the vinaigrette, toss VERY lightly with the salad ingredients and serve.

Pistachio Vinaigrette

8 ounces – pistachio oil
3 ounces – white vinegar
Juice of one fresh lemon
Salt & pepper to taste


Stoli Blueberry Mojito Recipe

1.25 oz stoli blueberry
Fresh muddled blueberries
4 mint leaves
1 oz simple syrup
2 oz soda water
