The dinner will feature foods that are known to be good for the brain and the body as well as nourishing for the soul, along with top-rated wines presented by Master Sommelier, Joseph Spellman of Justin & Landmark Vineyards in California. Spellman, one of only 118 Master Sommeliers in North America, has been in the industry for over 30 anos. The title of Master Sommelier is considered the highest achievement in the world of wine and is a distinction that only 186 people in the world have received since The Court of Master Sommeliers was established in 1973. Spellman earned the distinction in 1996. Spellman was elected chairman of the Court of Master Sommeliers in 2005 and is one of only two Americans to have won the prestigious title ofBest Sommelier in the World in French Wines & Spiritsin 1997, followed by Bon Appetit Wine & Spirits Professional of the Year among his many accolades. Spellman is a leading wine educator conducting seminars all over the world and will be sharing histhoughtswith Vine & Dine guests. Spellman is just one of the many distinguished wine experts to appear at Rosen Centre’s Vine & Dine series recently. The first course duringFood for Thoughtwill include Mixed Greens with Black Quinoa, Kamut, Barley, Butternut Squash and Citrus Vinaigrette paired with a Justin 2010 Chardonnay. Quinoa is considered a complete protein, containing all nine amino acids plus antioxidants which aid in brain and neuronal function. Kamut is also a high energy grain, while barley is known as a blood glucose stabilizer and lowers bad cholesterol levels. The second course features Tea Smoked Salmon served with a 2009 Landmark Grand Detour Pinot Noir. Salmon is known for its high levels of protein and omega-3 fatty acids and helps lower the chance of dementia and stroke. Guests will then have the opportunity to cleanse their palates with a Herbes de Provence Sorbet before moving on to the main course, Grilled Venison with Blueberry Balsamic Sauce, Onion Marmalade, Charred Strawberries and Grilled Sweet Potatoes paired with a Justin 2008 Savant. Strawberries are proven to boost memory recall while blueberries are high in antioxidants and protect the brain from free radicals. Berries can boost short term memory and reduce the effects of Alzheimer’s and dementia. And finally, for dessert, guests may contrast one wine, the Justin 2010 Obtuse, with a Duo Dessert plate: Dark Chocolate and Raspberry Flan & Chocolate Mousse with Cointreau. Dark chocolate is high in antioxidants and can enhance focus and concentration. It is rich in flavonoids that improve blood flow to the brain and therefore cognitive ability. E, studies show that drinking wine reduces the risk of heart disease and certain cancers, and slows the progress of Alzheimer’s and Parkinson’s disease. The flavonoids and resveratrol act as antioxidants to reduce the effects of free radicals. Red wines contain higher concentrations of resveratrol than whites. Each Vine & Dine event begins at 7 Pm. with a reception in Everglades Bar that features a welcome wine or unique wine cocktail. For many of them, Mom’s home cooking was their inspiration for becoming a chef. In honor of Mother’s Day, they took a few minutes to share their favorite family recipes, passed down from Mom or Grandma, all of which can be found online at www.rosencentre.com. Chef EmeterioTelloLuna, the Head Chef at 98Forty Tapas & Tequila, was inspired by his mother to be a chef and credits her for his commitment to using only fresh ingredients. “My mother always used fresh ingredients as she refused to use anything processed. She would say that fresh ingredients make everything taste better and I completely agree,” recalled Luna. Although he’s now an acclaimed chef, Luna admits, Mom is a hard act to follow…I have many favorite dishes made by my mother but my favorite of all are her tamales… No one makes tamales like her. They just melt in your mouth like butter!” During the Mother’s Day brunch, guests can taste the family recipe for Porco refogada from Rosen Centre’s Executive Chef Michael Rumplik. The tangy recipe, the secret of which is a few cups of Pinot Noir, has been a Sunday dinner favorite in his family for more than 60 years and was passed to him from his mom, who in turn, learned it from her mother. Chef Tony Novoa, Executive Sous Chef, shares his secret for preparing delicious clams and mussels—a hint he learned from his mom. While the garlic, white wine, fresh Italian parsley and chiffonade basil certainly make them flavorful, the most important step, says Chef Tony, is cleaning and rinsing the seafood properly. Is it any wonder that Chef Fred Vlachos, Head Chef of Everglades Restaurant specializes in seafood and steaks when his own mother taught him how to prepare his mouth-watering Espadarte grelhado com Rosemary Aioli? Best served right from the grill, the swordfish won’t be featured on the Mother’s Day buffet, but aspiring chefs can try to replicate Chef Fred’s savory recipe at home—or try it at the Everglades Restaurant. Harris Rosen - Japan DollORLANDO (Março 26, 2012) – On Wednesday, Março 21, Harris Rosen, President and COO of Rosen Hotels & Resorts and the Harris Rosen Foundation and Honorary Consul General of Japan in Orlando, presented a $100,000 check to the Tohoku region of Japan and Urayasu, Japan to aid in relief efforts from the 2011 earthquake and tsunami. The announcement was made during a Japan Earthquake Relief check presentation ceremony held at 10 a.m. at the UCF Rosen College of Hospitality Management. Orlando Mayor Buddy Dyer was there to help present the check and spoke about Orlando’s sister city relationship with Urayasu, Japão, which shares Orlando’s roots in tourism as the home to Tokyo Disney Resort. Last spring, Rosen pledged to raise funds to assist with much-needed relief efforts. At that time, Lake Highland Preparatory School students asked him to match dollar for dollar any monies they might raise. When they came to the table with an astounding $43,240, he honored that pledge to make a total donation of $86,440. Since then, other donations from Rosen Hotels & Resorts associates and other sources have brought that total to $100,000. Mayor Dyer introduced exchange students from Urayasu, who conducted a brief presentation, sharing video and photos along with stories about their personal experiences involving the earthquake, the state of their homeland, relief efforts already in place and the resilient spirit of the Japanese people. The students also presented Rosen with a Japanese doll of friendship as a thank you for his efforts on their country’s behalf. “It was incredibly impactful to hear directly from the students about what they heard, saw and felt during the earthquake,” said Orlando Mayor Buddy Dyer. “I am incredibly honored that our community showed such an outpouring of support for the residents effected by the Japan earthquake and for Orlando’s long-standing relationship with the residents of Urayasu.The student presentation was followed by remarks from Rosen, who spoke about the need for relief in Urayasu and in the Tohuku region, which is one of the closest areas to the earthquake epicenter. “As a young man in the military, I was stationed in Japan and developed an affection and appreciation for the Japanese people and their culture. Because of my time spent there and the relationships I formed, I was honored to take on the role of Honorary Consul General for Orlando and am honored to be able to assist in fundraising and relief efforts. In this role, I hope to help in being a good steward of the money raised by the students at Lake Highland Preparatory School and by Rosen Hotels & Resorts associates and all who have so generously contributed.” Rosen, Mayor Dyer and Jeff Turner, Special Assistant to the President for Leadership Development, Lake Highland Preparatory School, then presented a $100,000 check, which was accepted on behalf of the Japanese sister city by Takako Johnson, a member of the Mayor’s International Advisory Committee. The presentation was followed by refreshments in the lobby. This is the second time that Rosen has matched funds raised by LHPS. Two years ago, the student body raised more than $116,000 for earthquake victims in Haiti, another cause near and dear to Rosen’s heart as more than one third of Rosen Hotels & Resorts associates are Haitian or of Haitian descent. Through his foundation, he also matched those funds, in addition to conducting numerous other fundraising, food and supply drives as part of his larger Relief-Rebuild-Sustain program for Haiti. Overall, the Harris Rosen Foundation has raised close to one million dollars for Haiti earthquake relief and continues to work on developing the low-cost, eco-friendly Little Haiti House Village.
