Blending old-world techniques learned from his mami’s kitchen in Mexico with expert culinary skills honed in some of New York and Orlando’s finest restaurants, Chef Emeterio “Tello” Luna has personally created a unique and upscale offering of authentic Mexican dishes for 98Forty Tapas & Tequila. Every item, from the ceviches, salsas and guacamoles to the quesadillas, nachos and tapas, is made from scratch using only the freshest ingredients. Even the spices, which are imported from Mexico, are ground by hand using the “molcajete” (Spanish for “stone method”), to unlock their true flavors just moments before arriving at your table. And, every dish is complemented by the finest assortment of rare and premium tequilas, hand selected by Chef Tello. You’ll taste the fresh ingredients, meticulous methodology and attention to detail in every bite.
