ORLANDO (March 6, 2016) – Rosen Centre®’s popular wine dinner series kicks off its 10th year of culinary adventures with the same delectable menus from the hotel’s acclaimed Everglades restaurant, but with a new twist and a new name. The popular events are now expanding to feature not only a five-course gourmet dinner expertly paired with wines of equal stature, but now guests of the newly named Vine & Dine Winemaker Series will be able to enjoy meeting and becoming intimately educated by the winemaker themselves.
The 2016 Vine & Dine Winemaker Series will feature three dinners this year, starting with the March 14 event which will showcase selections from the acclaimed Silver Oak Cellar and a special appearance from Silver Oak winemaker Nate Weis. The event begins with a special reception at 6:30 p.m. where guests will have the opportunity to meet and mingle with Nate Weis in one of the hotel’s opulent Presidential Suites, a special treat to kick off the series.
After enjoying a 2014 Twomey Cellars Sauvignon Blanc in the suite, guests will then adjourn at 7 p.m. to the renowned Everglades restaurant, offering a comfortable, yet refined setting that evokes the natural beauty and relaxed atmosphere of the Florida Everglades. Here they will enjoy a four-course dinner with seasonal ingredients punctuating each course expertly created by Head Chef Fred Vlachos, inducted in 2014 into Orlando Magazine’s Dining Hall of Fame, and wines selected by Weis that feature favorites from the Silver Oak and Twomey Wine Cellars to perfectly complement the menu.
Chef Fred will start guests with Seared Scallop with Celery Root Cream, Roasted Cipolini Onion and Candied Grapes paired with the 2014 Twomey Cellars Sauvignon Blanc. For the second course, Braised Rabbit with Dijon Rosemary Sauce is paired with the 2013 Twomey Cellars Russian River Pinot Noir. A Coconut Pineapple Sorbet follows to cleanse the palate. A tantalizing fourth course features Porcini Crusted Lamb Rack with a Smoked Paprika Sauce paired with 2011 Silver Oak Alexander Valley Cabernet Sauvignon. For the fifth course, guests are invited to enjoy a fromage selection featuring Mimolete, Petite Basque, Reypenaer Gouda served with Apricot Moscato Puree, Fig and Port Puree paired with 2011 Silver Oak Napa Valley Cabernet Sauvignon. Freshly brewed coffee and petit fours finish the elegant meal.
Weis, who earned his Master’s degree in Viticulture and Enology from University of California Davis and his Executive Master of Business Administration degree in Wine Business from Sonoma State University, has been a Cellar Master at Etude Wines, Assistant Winemaker at Patz & Hall Wine Company and Winemaker for Antica Napa Valley and Aril Wines.
Vine & Dine guests will be able to purchase bottles of Silver Oak wine which Weis will autograph that evening.
The first event is Monday, March 14, 2016, with a reception at 6:30 p.m. and dinner at 7 p.m. Price is $125 per person plus tax and service charge and includes complimentary valet parking.
