Looking for a unique culinary experience that offers great food, drinks, and Floridian summer vibes?
Sip &Savor is a popular dining event at Harry’s Poolside Bar & Grill, an island-inspired restaurant located beside the sparkling blue pool of Rosen Centre.

Originally started in 2015 to entice local foodies to the newest restaurant in Rosen Hotels & Resorts’ portfolio, this beloved event features a prix fixe multi-course menu prepared by Chef Emeterio “Tello” Luna.
Each Sip & Savor features a selection of either craft beers or high-end liquor featured in creative cocktails. Drinks are paired with a unique menu created by Chef Tello and his team to compliment the flavor profiles of the craft beer and cocktails.
The next Sip & Savor event is Saturday, Aug. 16, 2025 in collaboration with the acclaimed Green Bench Brewing Co. from St. Petersburg, Florida.

Reception Beer

As you arrive, you’ll be greeted with a refreshing pour of Postcard Pils.
This easy-drinking American Pilsner will wake up your palate with tastes of acidic citrus and a sweet grainy flavor derived from flaked maize.
I: Oysters & Pork Belly paired with Saison de Banc Vert

Once you’ve found your seat and are ready to dive in, you’ll start your Sip & Savor meal with a unique and elegant play on surf and turf.
Take a bite of crispy seared pork belly paired with an oyster fried in a masa batter for a balance of flavor that is both rich and light.
An airy lemon foam adds a layer of bright acidity to the dish, as does a bed of fresh greens beneath the pork belly.
This course is paired with Saison de Banc Vert, a bottled beer fermented in 100% oak tanks with Brettanomyces, a yeast that adds a rustic flavor.
Then aged in oak wine barrels, Saison de Banc Vert packs a flavor profile with fruity citrus and peppercorn spice, perfect to balance out the richness of the pork belly and fried oyster.
II: Beef Tenderloin paired with Bocage

Meat lovers will surely appreciate the second course of succulent beef tenderloin, resting atop a chickpea-orzo salad and topped with a colorful array of microgreens.
Hiding in the middle of this beautiful cut of meat is a stuffing made of spinach, tangy goat cheese, and earthy roasted peppers for an additional punch of flavor.
While red wine may be a more traditional pairing with red meat, this dish pairs beautifully with Bocage, a complex mead cider from Green Bench Brewing Co.
Despite its French name, Bocage is a love letter to English cider, lightly carbonated and very dry (unsweet).
Made from a variety of bittersweet cider apples, drinkers will be able to detect notes of leather and fruit skins that enhance the dynamics of the beef tenderloin dish.
III: Tamarind Sorbet

After two courses and a welcome beer, cleanse your palate with a refreshing tamarind sorbet.
This icy treat has a smooth texture that compliments the distinctively tangy and sweet flavor of tamarind.
Served without a beverage pairing, it’s the perfect way to prepare your taste buds for what’s still to come.
IV: Salmon paired with Alice – Blend 5

The fourth Sip & Savor course is a tender, flaky salmon that almost looks too pretty to eat – almost.
Flavored with citrusy yuzu, the beautiful cut of fish is placed atop a bright green pea and wasabi puree that encapsulates the freshness of springtime.
Worried about the heat from the wasabi? The flavor is subtle and mild, allowing you to experience the balanced flavor profile without setting your taste buds ablaze.
This dish is perfectly paired with Alice – Blend 5, a unique and artful blend of 32 barrels of Golden Ales fermented and aged in wine barrels.
Alice – Blend 5’s bright stone fruit and tropical citrus notes play off the dish’s yuzu flavors while bright acidity and hoppy bitterness balance the richness of the fish itself.
V: Chicken Tinga Tostadas paired with Sunshine City IPA

These flavor-loaded Chicken Tinga Tostadas harken back to Chef Tello’s Mexican roots.
Juicy, shredded chicken sits piled high on a crisp tostada shell and topped with colorful pickled onions and microgreens.
Drizzled over the tostada is chipotle crema, a recipe passed down to Chef Tello from his great-great-grandmother.
While the crema packs a spicy kick, a smooth and creamy dollop of avocado mousse and the sweetness of the pickled onions help balance the heat for a beautifully balanced bite.
This bold course is paired with Sunshine City IPA, Green Bench Brewing Co.’s homage to St. Petersburg.
With lots of hoppy flavor and aromatics, this beer’s tropical profile is the perfect pairing for a dish that will transport you south of the border.
VI: Coconut-Almond Bread Pudding paired with Searching for Tomorrow

The grand finale of Sip & Savor is well worth the wait.
This soft, indulgent bread pudding is rich and sweet, drizzled with an amaretto sauce and topped with sliced fresh strawberries.
The tropical taste of coconut and the subtle crunch of almonds add the perfect texture to this beautiful dessert.
Searching for Tomorrow delivers a complementary fruity personality for a sweet finish to your Sip & Savor experience.
A blend of mixed-culture dark ales, Searching for Tomorrow undergoes a long fermentation on whole fruit blackberries and spends nine months acquiring a jam-like profile with a dry finish.
